Superb Spelt Muffins
2 cups rolled oats
1 cup wholemeal spelt flour
1/4 tsp. sea salt
1 Tbsp. arrowroot
1 Tbsp. aluminium-free baking powder
1/2 tsp. cinnamon
1 tsp. vanilla
1/2/3.4 cup rice syrup
1/2 cup safflower or olive oil
2/3 cup water
1/2 cup sultanas or currants (optional)
Sift the dry ingredients (except oats) into large mixing bowl. Add oats, vanilla, rice syrup, oil and water and mix together. Oil a muffin tray. Fill muffin cups 2/3 full. Bake for 25 minutes at 200°. Makes 12 muffins. Delicious!
